Korma Curry

on a crisp Monday evening after a long day at the office I am faced with what to make?  What to make that is scrumptious and easy and filling and doesn’t require more than an hour just to prepare it.

Frozen or fresh Spinach, frozen or canned peas, diced onion, organic extra firm tofu and a jar of Korma Curry (Patak’s is the brand we love if we’re not making an Indian sauce from scratch).  Steamed rice and some naan, and there you have it!

It’s really the way to go when you don’t want to eat heavy, but will still have a full belly when it’s over and maybe even some room for ice cream or something of that sweet nature.
