I love artichokes. I went to the local market and they were 3 for $5. Done and done.
Sitting in a lemony, garlic water bath, I sprinkled some extra virgin olive oil on them and sprinkled them with garlic, salt and pepper and a squeeze of lemon. They’ll steam for about 45-50 minutes. I’ll make a lemon vinaigrette to dip them in and also melted butter for the ones who like to keep it simple.
These will served alongside a pot roast that’s been in the slow cooker for almost 8 hours, some french bread with salted butter, baked sweet potatoes and one more vegetable side dish that I haven’t decided on yet. Happy day off dinner for all.
