Cold Weather…Warm Spoonfuls

Of vegetarian chili served alongside corn tortilla with melted cheese and sliced jalapeños!!! Welcome to Monday!!!

Chili:

1 whole chopped yellow onion

1 carrot sliced

2 stalks celery

Eggplants peeled and cut up

32 oz can crushed tomatoes

15 oz can light red kidney beans

1 can of corn

1 chopped green pepper

We like everything chunky I don’t cut things up into tiny pieces so save yourself some time 😊

Sauté onions and peppers and celery with some olive oil

Add in the rest of veggies about 8 min later

Stir in tomatoes and beans

Add 5-6 tbsp chili powder

1 tbsp of garlic and onion powder and oregano

1/2 tsp salt

Stir and turn to low heat

Corn tortillas:

Place on a baking sheet

Sprinkle cheese and jalapeños over top

Broil on high till cheese is bubbly and tortillas look crispy

Enjoy this easy Monday dinner with friends or family …it’s a great scrumptious treat for all….❤️❤️
