Almond Cake

This might be the year of the tube pan, bundt cake and all things molded!  Kidding, but it might be a theme for a while.


2.5 cups flour

1 cup sugar

2 sticks butter (I use salted)

3 eggs

4 tsp vanilla extract

1/2 tsp almond extract

2 tsp baking powder

1 tsp baking soda

1 cup slivered almonds

1 cup of plain whole milk yogurt or sour cream (for this I used the yogurt)

Using a hand mixer, mix the butter and sugar.  Add the eggs, one at a time.  Add in the powder and soda, next the extracts and then the yogurt.  Lastly sprinkle in 1/2 cup at a time of the flour.  Fold in the slivered almonds and voila.  Pour into a greased tube pan.

350 degrees for 50-55 minutes.

Take it out of the oven let cool about 5-10 minutes, flip it onto a plate and serve warm.  Or wrap it up and bring it your co-workers (that’s where all of my homemade goodies go).  I send out an email and let them know I baked…… it’s that simple.  It brings smiles and conversations and laughs and happy co-workers all around.  It also adds to my baking den and allows me to continue writing about baking!!!  Enjoy friends!  Scrumptious indeed.
