It is quite possibly my most favorite soup….
I love it!
Plus it’s finally cooling down in AZ and I can make it as often as I like …
3-4 heads of broccoli chopped up into bite size pieces …drizzled with olive oil and sprinkled with salt and pepper
374 degrees for 15 min
In a pot:
Melt 1 stick of butter and add in 1 onion diced up…
Let onions soften
Then add 1/3 c of flour
Add in 4 cups of whole or 2% milk and 2 cups of half n half (or 1 cup of heavy cream and 1 cup of chicken stock)
Add in the roasted broccoli
Let soup cook for about 30-40 min
Add in 2 cups of cheddar cheese
Sit down and enjoy 😊😊😊
