Salmon Pasta Salad – Salad

Roasted salmon in the oven with just a light sprinkle of salt and pepper.

375 degrees for 15-20 minutes

Toss in a bowl:

Chopped romaine lettuce

Chopped carrots

Minced purple onion

Chopped cucumber

Chopped yellow pepper

Cold rotini pasta

Vinaigrette:

In a mason jar:

1/2 olive oil

salt and pepper

1 Tbsp dijon mustard

3 Tbsp white wine vinegar

2 tsp honey

Close and tighten lid and shake.

Plate the pasta salad salad and top with cooked salmon, then drizzle the dressing on top.

Voila – a pasta salad salad that is so scrumptious you’ll be so glad you made it.
