Carnival Meringues

Cloud cookies as they are affectionately known in our home…crunchy white meringue cookies with any kind of filling or mix in you desire…

3 egg whites

1/4 tsp cream of tartar

Beat till foamy

Slowly add in 1/2 cup of sugar (teaspoon at a time) on high with an electric mixer

The mixture will become shiny and thick and will eventually be stiff

Fold in sprinkles or chocolate chips, peppermint extract and some cocoa nibs, sometimes I bury a maraschino cherry inside of them

Spoon drops of it onto aluminum foiled pans, they don’t spread or rise so they can be somewhat close together 😊

You bake them at 225 degrees for about 80 minutes, let them sit in the oven for another 15 minutes with the heat off

They shouldn’t be sticky when you touch them or seem soft, they’re doppelgänger is the cloud, but these are quite the opposite … clouds of crunch with a little carnival inside (the rainbow 🌈 sprinkles)!!
