Spaghetti with Zucchini

If you don’t own a mandolin, you should.  I used mine to make these paper thin slices of zucchini.  I lightly saute them in olive oil and lemon juice, then I boil some spaghetti and add it into the pan with the zucchini.  Dress it up with some parmesan cheese and some salt and pepper and another quick squeeze of lemon juice and I am done.  It’s delicious and peppery and nutty and really hits the spot.  Plus the kids and Will love it!
