Claws and Trees

Tonight was let's take is easy on Mom and let her cook something without 1,000 steps kind of dinner.

I wrapped up some sweet potatoes in foil and baked them for about an hour…

I roasted some cauliflower in olive oil and sea salt…

I sautéed some broccoli with minced garlic, vegan butter and olive oil…removed them so they wouldn't lost all their nutrients and then threw in some raw, shell on, large shrimp to cook…put the broccoli back in and tada!!!

Then I drizzled lemon juice and olive oil on the crab and salted them a pinch, covered them in foil ( lay them flat- no overlap) and bake them at 450 degrees for exactly 10 minutes.

Scrumptious Monday feast…with hardly any stove time (where my hot flashes kick in) and dinner makes it to the table with the snap of your fingers….
