What’s In Your Fridge?

Homemade hummus and pita
1 can of garbanzo beans, drained and rinsed
3 cloves minced garlic
I eyeball these two ingredients but a few tablespoons each of Tahini and olive oil
Freshly squeezed lemon 🍋 from half a lemon
Salt and pepper

Mix in a blender and serve with freshly cut up tomatoes, cucumbers and radishes and a pita that's been warmed up…..

Asparagus risotto – Trader Joe's

Heirloom cherry tomatoes 🍅

Lots of lettuce 🥗

Cucumbers 🥒

Carrots 🥕

Broccoli, peppers

Hatch chiles 🌶
Cut each on in half and remove the stems and seeds
Mix some breadcrumbs and Parmesan cheese along with salt and pepper and some crushed red pepper flakes add a little unsweetened almond milk and a beaten egg white to bind the mixture
Stuff inside the pepper and drizzle
Olive oil over the top
Cover with foil and bake 400 degrees for 30 minutes

Corn 🌽
Shuck the corn from the cob
Chop red onion and garlic
Add chopped pepper (any color) I use red
Spread on a pan and drizzle with olive oil and sprinkle oregano and salt and pepper and lightly toss with your hands
Roast in over 375 degrees for 40 min
Serve warm or room temp

Apples 🍎
Applesauce of course

Cherries 🍒
As a snack

Eggplant 🍆
Cut up and peel
Dredge wheels in bread crumbs and sprinkle with salt and pepper
Stack with thick slices of tomatoes
Cover in your favorite homemade or store bought marinara
Cover with foil
Bake 375 degrees for about 45 minutes

Almondmilk creamer with my favorite coffee flavor 'Jamaican me crazy'

So many in season items and many dairy free options as well as we move towards some plant based items….

In the freezer are lots of veggies and a variety of berries, frozen pineapple and lots of good seafood!!!
