Just me and the kids tonight since Will is in LA at a basketball camp. Something simple and yummy.
Aha! Sautéed shrimp with veggies and an easy soy sauce ginger sauce to bring it all together.
Olive oil in a pan
1/2 chopped yellow onion
Handful of each, chopped:
Sauté till al dente (yes it's a pasta word but we don't want mushy veggies)
In a cup mix:
1/2 cup chicken stock
1 tbsp corn starch
2 Tbsp spy sauce
1 tsp sesame oil
A sprinkle of crushed red pepper flakes
Salt and pepper
1 Tbsp finely chopped ginger
About 12-15 raw shrimp with the tail on
Pour over the top of the veggies and toss in the shrimp
Cook till pink then turn off the heat and cover.
Serve with rice and some sliced cucumbers 🥒.
It's really an easy delicious dish for all to make and enjoy!
