I think most of us foodies will agree that boxed Pop Tarts are dry and kinda gross…right? Right!
I had some leftover pie dough and decided to make some homemade pop tarts (you know the kind that don’t last for 5 years in a box).
I had just gone to Sprouts and bought a ton of blueberries to freeze for when they weren’t in season.
Blueberry (Pie) Filling:
3/4 cup sugar
3 Tbsp cornstarch
1/8 tsp salt
1/4 cup cold water
5 cups of blueberries (set 2 cups aside)
1 Tbsp butter (unsalted as always)
1 Tbsp freshly squeezed lemon juice
A pinch of cinnamon if you like too
In a saucepan over medium heat add the first 5 ingredients (3 cups of blueberries). Heat for about 3 minutes until thick and bubbly.
Remove the pan from the heat source and add in the butter and lemon juice and the other 2 cups of blueberries.
Stir and let cool.
This is your scrumptious blueberry filling for your tarts.
Cut the pie dough into rectangles and add a Tbsp of the blueberry filling and top with another piece of pie dough. Crimp the sides together with your fingers or a fork and brush the tops with beaten egg wash.
Bake for 350 degrees for about 20 minutes and then remove from the oven and dust with powdered sugar.
Sit down and enjoy a pop tart with some cold almondmilk and never look back on those cardboard boxed pop tarts, because once you make these, the boxed tart’s shelf life has expired from your home.
