My Version of Minestrone

I love soup.  I am sure I have said that before.  I really love soup.  Any kind.  Any ingredients, any day – hot or cold outside.

Olive oil in a pan

1 chopped purple onion

1 carrot, sliced

1 stalk celery, celery

1 clove garlic, chopped

1 red pepper, chopped

1 red potato, chopped

Saute till soft about 7 minutes and then remove and place in a separate bowl

Add some more olive oil

Add the ground beef and season with:

Onion powder

Garlic powder

Seasoned Salt

Italian Seasoning

Once cooked through, drain the liquid/fat

Add in about 4 cups chicken stock and about 6 canned whole tomatoes (squish them with your fingers into the pot so you don’t lose any of the liquid)

Then add the veggies back in and add in about 1/2 package of your favorite macaroni

Cover and let boil for about 15 min on Medium-High

Turn the heat down to Medium-Low and let simmer and stir often

Spoon it into your favorite bowl [mine has a red heart in the center of the bottom] and sprinkle some cheese or freshly grated pepper and enjoy.  The flavor is robust and full of the seasonings and vegetables and the seasoned beef.  It really is a scrumptious soup to be enjoyed any given day.
