The kids are finally back home from their month long vacation with my family back in New York. My oven is back in business. We of course, are healthy eaters, but making cookies every now and again is quite the treat.
I recently was at Costco and they had this giant bag of craisins on sale for nothing so I bought a bag. Will likes them in his overnight oats and I like them in cookies with oats. This morning I woke up and got ready to work from home, and decided to throw in making a batch of my Cranberry Oatmeal cookies.
Oven – 375 degrees
In a bowl mix:
1/3 cup of softened butter
1/3 cup vegetable oil
2/3 cups dark brown sugar
2 eggs, one at a time
In another bowl:
1 1/2 cups flour
1 1/2 cups oats
1 tsp baking soda
1/2 tsp salt
Mix the wet ingredients into the dry and stir together
Add in 1 overflowing cup of Craisins
Walnuts if you like
White/Dark chocolate if you like
Scoop out with a medium size cookie scoop 6-8 per sheet and bake one sheet at a time for 10 minutes.
Voila. Soft oats with sweet juicy craisins ready to be devoured warm or room temperature. They really are a scrumptious treat.
