Hand Pies…Jam Pies For All

They can fit in the palm of your hand and two bites later your mouth is watering for another.  If you could throw one in your pocket for later you would, but you can’t or you’d have a jam pocket …lol.

Here we go:

2 1/4 cups flour

3 Tbsp sugar

3/4 tsp salt

1 cup cold unsalted butter

1/2 plus a little extra almondmilk (sweetened vanilla)

Your favorite jam

Mix the flour and sugar and salt

Add the cold chopped butter and mix with a pastry cutter until it look like little gumballs

Then add the almondmilk and mix up with a fork

Empty out the mixture onto a floured board and lightly knead, divide into two parts and plastic wrap them and place in the fridge for about an hour

Roll out each disk one at a time leaving them in the fridge when not in use

Roll out fairly thin and cut out 3″ circles

Add a small spoonful of your favorite jam and then fold over and seal with a fork

Brush each pie with a beaten egg and sprinkle sugar on top

Bake your pies at 375 degrees for about 16-17 minutes

Let cool on a wire rack and then package up and pass them out and watch the smiles appear 😊

I used black cherry jam for this set and they were absolutely scrumptious.
