Yes, I know it’s bloody hot outside…but I love lentils and I love lentil soup and while my ingredients are not typical for lentil soup, they make it extraordinary.
1 Whole chopped yellow onion
Chopped garlic cloves 1-2
1 carrot, sliced
1 celery stalk, chopped
About 1 1/2 cups cabbage, thinly sliced
Two ears of fresh shucked corn
2 cups lentils ( I use small green ones from Trader Joe’s)
1 Large can of diced tomatoes
About 4 cups of chicken stock
Sauté the cabbage, onions, garlic, carrots and celery
Add the diced tomatoes and chicken stock
Add in the corn and 1 bay leaf some salt and pepper to taste and some crushed red pepper for a little spice
Stir and let heat up for about 30-40 min on stove over a medium to low heat
Then serve and enjoy the smells and warmth and goodness!
