Cold Sweet Potatoes Turned Hot Commodity 

I buy these little red mesh bags of sweet potatoes from Trader Joe’s and bake them all at once and then put them in Tupperware for later use in the week.  Will usually just eats a whole one ( including the peel – the nutritious part) and then there are some leftover for me to use.

Tonight I decided to make sweet potato muffins for my office homegirls.

1 cup cold sweet potatoes or more I used almost 2 cups

1 cup of sugar

1 cup of flour

1 egg

1/2 canola or vegetable oil

1 tsp cinnamon

Mix it all together and scrape the sides and then scoop out large scoops into muffin tins (sprayed or buttered) or you can use paper muffin wrappers.

375 degrees for about 16 minutes till the knife comes out clean ☺️🍠

You can eat them by themselves or with a dollap of whipped cream or cool whip.

There’s a universal glaze I use too sometimes:

Confectioners sugar (1 cup)

Eyeball down vanilla almondmilk

Melted butter (1 Tbsp)

Pinch of cinnamon

Stir and drizzle across the tops

They really are divine and they’re the perfect mouthful of goodness with a touch of sweet and the smell of cinnamon to knock your socks off!  Enjoy!
