Friday Lunch…At Home

I was looking through the freezer when I realized I had an inordinate amount of chicken in it.  I took out two packages to defrost in the refrigerator.  I decided last evening to put some in the crock pot with some teriyaki sauce, knowing I would be home today with the kids.

Early this morning I shredded and put the chicken into a bowl for use later today.

I ended up making chicken teriyaki bowls for the kids, Logan and Stella, and my boyfriend, Will.  Shredded teriyaki chicken on the bottom, then a layer of steamed white rice, topped with sauteed zucchini and onions in olive oil and soy sauce and finally sprinkled with shredded lettuce to give it some crunch.

The bowls were a hit!  Stomachs full and smiles from ear to ear.  There’s not much to this one.  It’s just simple and easy and healthy for the kids and adults.
